Vegan Vodka Sauce

Using Coconut Milk and Nutritional Yeast

Dairy Free Vodka Sauce

Recently I decided to take a hiatus from dairy, in fact I won’t be having dairy, sugar, or caffeine(among other wonderful things) for 90 days. In these 6 days so far this is the first recipe adaptation and my Italian mother says you can’t tell it’s vegan.(It’s the coconut milk and nutritional yeast I have to thank for that)

I served this two ways, over butter beans which you warm until they are soft and over protein pasta. (Banza made from chickpeas or DeCecco made from red lentils are my favorites) If you think you hear my Nana screaming from heaven you would be wrong, she was doing Jumping Jacks with Jack Lalanne, this would be right up her alley.

Ingredients:

  • 2 Cento Organic Double Concentrated Tomato Paste Tubes

  • 1 can of tomatoes

  • 1 cup vodka

  • a lighter for flambé

  • “7” cloves of garlic(I measure this with my heart but that isn’t for everyone)

  • 2 white onions

  • Black Pepper, red pepper, and salt to taste

  • 1 can Coconut milk 13.5oz (I used Goya but use what you have, Cashew milk would work)

  • Basil

  • olive oil for pan

  • 1/2 cup Nutritional yeast for sauce and to taste for serving.

  • 4 cans of butter beans or pasta of choice

    Get Cooking

  1. Mince the garlic, chop the onion, and add to a pan with olive oil.

  2. Sauté the garlic and onions until golden brown.

  3. Add vodka from measuring cup and light. This burns off the alcohol and finishes caramelizing the onions.

  4. Add tomato paste tubes and simmer for 10 minutes.

  5. Transfer to a high speed blender and add in coconut milk and canned tomatoes.

  6. Pour sauce back in pot and season to taste, I grind a lot of pepper in and use table salt and sea salt with red pepper. I add the nutritional yeast and then taste, the nutritional yeast is what makes it taste like it has cheese in it.

  7. Serve with nutritional yeast to sprinkle on top.
