WTF is MSG?!

MSG

Monosodium glutamate (MSG)

MSG (monosodium glutamate) is a flavor enhancer commonly added to processed foods, fast food, and restaurant dishes to boost umami (savory) taste. It is the sodium salt of glutamic acid, an amino acid naturally found in foods like tomatoes, cheese, and mushrooms.

Why Is MSG Considered Bad?

MSG has been controversial because some people report symptoms like:

• Headaches

• Flushing or sweating

• Nausea

• Heart palpitations

• Numbness or tingling

This collection of symptoms is sometimes called “Chinese Restaurant Syndrome” (a term that is now outdated and misleading). However, scientific research has not consistently confirmed that MSG causes these reactions in most people. The FDA considers MSG safe when consumed in normal amounts.

Potential Concerns

Overstimulation of the Brain – Some argue that MSG acts as an excitotoxin, overstimulating nerve cells, which could contribute to neurological issues. However, this is debated.

Hidden in Processed Foods – MSG is often found in ultra-processed foods, which are linked to poor health outcomes.

Sensitivity in Some People – While most tolerate MSG well, some individuals are sensitive to it and experience negative symptoms.

Should You Avoid MSG?

If you notice symptoms after consuming MSG, it might be worth avoiding. Otherwise, moderate intake from whole foods or occasional processed foods is unlikely to cause harm. The bigger concern is the overall quality of the diet rather than just MSG itself.
